This pairing brings together the two most recognised benchmarks of caviar the world over. For discerning enthusiasts who wish to compare them side by side, it is the ideal opportunity to educate the palate and experience the nuances symbolic of each species.

The 2 mother-of-pearl spoons included allow a simultaneous tasting for 2 guests, or a successive comparison with one spoon per caviar to avoid contact between the two. Ideal for the grandest occasions or for major gifts (birthdays, landmark professional events).

What is the difference between Beluga and Oscietra Supérieur?
The Beluga (Huso huso) offers the largest pearls (up to 4 mm), a pearly grey to bronze-black colour, and a buttery, complex profile. Its rarity stems from its late maturation (18 years minimum). The Oscietra Supérieur (Acipenser gueldenstaedtii) offers finer pearls and more pronounced hazelnut and fruity notes, in a French signature crafted by Prunier. Two complementary profiles.
How do you organise the comparative tasting?
Begin with the Oscietra Supérieur (the more accessible) before the Beluga (the more intense). Serve each caviar with a spoon, in a small quantity (3 to 5 g per tasting), on the back of the hand or on a plain blini. Pause between the two, with a sip of still water, to cleanse the palate. This progression lets you perceive the nuances symbolic of each species.
Which wine should you serve with this duo?
For a pairing worthy of the occasion, favour a vintage brut champagne (Caviar House Brut Vintage, Dom Pérignon, or equivalent). The structure and complexity of the champagne sympathise with both caviars without masking either. Ice-cold vodka is the other classic option.
