With its generous pearls and incomparable length on the palate, Kaluga caviar pairs wonderfully with a perfect egg. This is where the runny yolk, the tender white and the buttered toast meet the soft, deep intensity that is the signature of the Kaluga.
Ingredients
- 2 very fresh eggs
- 2 thick slices of sandwich bread
- 30 g good-quality unsalted butter
- A few sprigs of fresh dill
- 50 g Kaluga caviar
Method
- Lower the eggs into a pan of boiling water and cook for 6 minutes for a set white and a still-runny yolk.
- Cut the bread into long soldiers and fry them in butter until nicely golden.
- Butter the soldiers generously as soon as they come off the heat.
- Set a piece of toast on the board or on the plate.
- Gently crack the egg on top and open it to let the yolk escape slightly.
- Spoon the Kaluga caviar generously around and over the egg with a mother-of-pearl spoon.
- Add a sprig of dill and serve with the warm soldiers.
