FAQ
Our expert answers your questions
Why crème fraîche with caviar?
Crème fraîche is the traditional companion to caviar and smoked salmon: its mild creamy tang and gentle acidity round out the briny profile without ever masking it, whilst bringing freshness and a creamy contrast. Neutral and delicate, it serves as a setting for the product, highlighting its aromas and softening the saline intensity, particularly that of salmon roe. It is a classic marker of the tasting, on a blini or a piece of toast.
Crème fraîche or liquid cream?
To accompany caviar and smoked salmon, favour thick crème fraîche over liquid cream. Thick cream can be placed in a neat dab without running, allowing for a refined presentation. Liquid cream, more often used in hot cooking, is not suited to these uses.
How long does it keep after opening?
5 to 7 days after opening, kept refrigerated in its resealed container. Crème fraîche is a sensitive dairy product: reseal it well and avoid cross-contamination with other foods. If the texture or smell changes (sour, fermented), discard the product.
Can crème fraîche be replaced with an alternative?
For classic tastings, crème fraîche remains the benchmark. If needed, a mild fresh cheese (such as a thick fromage blanc) can serve as an alternative, following a similar logic of texture and neutrality. Avoid reduced-fat creams or yoghurts, whose more pronounced acidity would alter the pairing.
Crème fraîche 170g
Crème fraîche is one of the simplest and most essential accompaniments to caviar and smoked salmon. Its thick, smooth texture, its neutral profile and its natural mildness extend the aromas of the main product without masking them. It is this very neutrality that makes it a universal accompaniment, as much at home on the great tables as in the simplest of uses.
Our crème fraîche is selected for its quality: full-fat cream, a thick texture, a clean and fresh profile. It sets itself apart from liquid or reduced-fat creams by its consistency, which allows it to be placed in a neat dab on a blini or a toast without running.
Ideal as an accompaniment to caviar (where it softens the briny intensity), to smoked salmon (where it brings freshness against the notes of the smoking), or to garnished blinis (where it acts as a link between the warm blini and the cold topping).
