FAQ
Our expert answers your questions
What is the difference with the Large Blinis?
Only the format changes: the Small Blinis (16 pieces) are mini-pancakes designed for the aperitif and individual bites, whereas the Large Blinis (4 pieces) offer a serving format for seated starters. Same leavened recipe, same soft texture, same use with caviar, smoked salmon or salmon roe.
How many small blinis per guest?
For an aperitif, allow 2 to 3 small blinis per person, garnished with caviar, smoked salmon or salmon roe. The 16-piece format therefore suits 5 to 8 guests, depending on whether it is a single canape or an assortment.
Why warm the blinis?
A warm blini offers a soft texture and a contrast in temperature with the caviar (cold) or salmon (cold) that crowns it. Served cold, it remains perfectly edible but loses its characteristic softness. Warming it for 2 to 3 minutes in the oven, or 30 seconds per side in a pan, is enough to restore the ideal texture.
Do blinis suit other toppings?
Yes, the blini is a neutral base that lends itself to many toppings: caviar, salmon roe, taramasalata, smoked salmon, foie gras, fresh herb cheese. It accompanies savoury aperitifs just as well as certain sweet preparations (jam, fromage blanc, honey).
Can blinis be frozen?
Yes, blinis can be frozen in their unopened original packaging. To defrost, let them rest for 1 to 2 hours at room temperature, then warm them following the usual method (oven or pan). The texture is slightly less soft than when freshly bought, but will still warm through well.
Small Blinis (16 pieces)
The Caviar House Small Blinis carry forward the tradition of fine Russian gastronomy. The blini, a small leavened pancake made from flour and yeast, has accompanied caviar and salmon roe in the codes of Russian-style service since the nineteenth century. Its soft, lightly airy texture serves as a neutral setting that brings out the aromas of the main product.
Our 16-piece format (small blinis) is designed for the aperitif and the drinks reception: each mini-pancake, already portioned, holds a touch of caviar, a spoon of crème fraîche and a classic topping (chives, dill, finely chopped red onion). The individual format lets you multiply refined bites and pass round elegant canapes, in the tradition codified by the great Russian and French tables.
