FAQ
Our expert answers your questions
How should you serve a Balik salmon tartare?
The Balik tartares are best enjoyed well chilled, taken from the refrigerator a few minutes before serving. A mouthful on a warm blini, a cracker or a light toast brings out the smooth, creamy texture. For a refined starter, a quenelle of tartare set on an endive leaf, with a few sprigs of chive or some pink peppercorns, makes a fine impression. A 100 g format suits two to four guests as an aperitif.
What is the difference between the three Balik recipes?
The three Balik recipes share the same base: Balik Classic salmon chopped by hand and enriched with light fromage blanc. The Tartar Classic expresses its pure signature, with no added spices. The Tartar with basil and herbs brings a Mediterranean freshness, fragrant and light. The Tartar with garlic and chilli introduces a spicier, bolder dimension. Each recipe plays on a different balance between the mildness of the salmon and the intensity of the seasoning.
How long does an opened tartare keep?
Once opened, the tartare keeps best for 24 hours in the refrigerator, in a sealed container. It is a preparation of raw salmon, and so calls for a well-managed cold chain. We advise serving it chilled and not leaving it at room temperature for too long.
What goes well with a salmon tartare?
Blinis, plain crackers and black bread are classic supports that bring out the smooth, creamy texture. For an aperitif, a brut champagne or a blanc de blancs accompanies the Tartar Classic and the Tartar with basil particularly well. For the Tartar with garlic and chilli, a more aromatic white wine, such as a Riesling or a Sauvignon, echoes the spicy dimension. A vodka is also a fitting choice, in keeping with the Balik tradition.
Find the salmon tartare that is right for you
Our selection brings together three Balik recipes, all in a 100 g format. The Tartar Classic, enriched with light fromage blanc, expresses the authentic aromas of the Balik Classic salmon, in a smooth, creamy texture. The Tartar with basil and herbs brings a Mediterranean touch, ideal for summer aperitifs. The Tartar with garlic and chilli adds character, in a successful contrast between the mildness of the Balik salmon and the heat of the spices.
How to choose your salmon tartare
It all depends on the moment and the taste you are after. For an appetiser true to the Balik salmon, the Tartar Classic is the essential choice. For a fresh, fragrant touch, the Tartar with basil and herbs accompanies summer buffets particularly well. And for a tasting full of contrast, the Tartar with garlic and chilli brings a spicy dimension that enlivens an aperitif platter.
Salmon tartare, the chic and refined aperitif
Salmon tartare is one of the preparations that calls for the greatest freshness and precision. The salmon is chopped by hand, which preserves the suppleness of the flesh. At Balik, since 1978, this precision follows on from the expertise of the house. Norwegian Salmo salar is selected according to such criteria as origin, firmness of flesh and the quality of the rearing water.
The enrichment with light fromage blanc, such as lean quark, brings a creaminess to the texture, whilst the salmon keeps its aromatic presence. Three recipes draw on this base: the Classic, the basil and herbs, and the garlic and chilli. This adds a practical versatility: the Balik tartares are as much at home in an aperitif as in a dinner at home, as a festive bite or a more elaborate starter.
