Caviar House Impérial
Caviar House's first creation, since 1980
Caviar House's first creation, dating from 1980, Oscietra Imperial is among the finest Ossetra caviars. This rare caviar comes from more mature sturgeon that have taken longer to yield their precious roe.
From the moment it is opened, it is distinguished by its bright, hazelnut-brown colour and its firm pearls of generous size. On the palate, it reveals delicate, complex hazelnut aromas, giving way to a fine length characteristic of the species.
It is one of the most accomplished expressions of Acipenser Gueldenstaedtii.

FAQ
Our expert answers your questions
Does the name "Imperial" indicate a level of quality?
The Imperial is a specific variety of Oscietra, not an absolute level of quality. Our Finest Caviar Oscietra Imperial is harvested from particularly mature sturgeon, selected for their brighter pearls and their more complex aromatic palette.
What is the difference between Oscietra Imperial and classic Oscietra?
Oscietra Imperial is harvested from more mature sturgeon than classic Oscietra, which translates into brighter pearls (hazelnut brown), a firmer texture and a more complex aromatic profile (more pronounced hazelnut notes). Classic Oscietra offers a more obvious and immediate experience of the species, whereas the Imperial pushes the aromatic signature further.
Can Finest Caviar Oscietra Imperial be given as a gift?
It is one of our most popular caviars to give as a gastronomic gift. Its historic renown (a 1980 creation), its recognisable aromatic profile and its consistent quality make it an iconic signature of our selection.
Its 50 g format is perfectly suited to a gift for two guests, paired with a champagne or a vodka. Our team can compose a personalised gift set to suit your preferences.
Caviar House Impérial
Finest Caviar Oscietra Imperial is the first creation of our House. It perfectly illustrates Caviar House's commitment to selecting the finest caviars over decades.
This caviar is harvested from Acipenser Gueldenstaedtii sturgeon that have reached full maturity. The additional time spent in farming allows the roe to attain its most accomplished expression: brighter pearls, a firmer texture, a more complex aromatic palette. The hazelnut notes, characteristic of the species, gain in depth and persistence.
On tasting, the Imperial offers a rare balance between power and delicacy. The briny hit gives way to an enveloping roundness, releasing hazelnut notes on the finish. The length on the palate, the signature of great Oscietras, extends the experience far beyond the pearl.
Like every caviar in our range since 1950, the Imperial is the fruit of a long-term partnership with farms chosen for their exacting standards and their respect for the sturgeon.
