FAQ
Our expert answers your questions
Why is Beluga farmed for a minimum of 18 years?
Huso Huso is one of the sturgeon species with the latest sexual maturity. It is this slow work of time that gives the pearls their characteristic size (up to 4 mm), their creamy texture and their unique aromatic palette.
How do you recognise a true Beluga?
Three markers distinguish an authentic Beluga. The size of the pearls, among the largest in the world (3 to 4 mm). The colour, pale grey to almost pearly. Finally, the aromatic signature, marked by buttery notes and a controlled length on the palate. All our Beluga by Caviar House comes from selected partner farms, in keeping with our exacting standards since 1950.
Can Beluga be kept for more than 24h after opening?
We recommend consuming it within 24 hours of opening the tin, to best preserve its aromatic richness and the firmness of its pearls.
What quantity of Beluga should you allow for a gift?
For two people, a 50 g tasting format is the best way to discover the species (that is, two portions of around 25 g). For four guests or more, opt for a 125 g format or larger. Our team can help you compose a gift set including the Beluga, a brut nature champagne and mother-of-pearl spoons, for a complete tasting experience.
Caviar House Finest Caviar Beluga
Finest Caviar Beluga is one of the most iconic caviars in our range. A true benchmark far beyond gastronomy; it even appears in the James Bond films. It is harvested from the Huso Huso sturgeon, one of the largest and most ancient fish in the world. This fish can reach up to five metres in length and weigh up to a tonne.
Its remarkably generous pearls take on a pale grey, almost pearly hue. Its very creamy texture then reveals delicate buttery notes and a touch of hazelnut on the finish. Between power and delicacy, this aromatic density marks the unique character of Beluga.
Tasting the caviar on its own, with a mother-of-pearl spoon or "a la royale" on the palm of the hand, remains the finest way to appreciate its full aromatic richness. To extend the experience, champagne reveals the most subtle notes of Beluga, like a flavour enhancer; served ice-cold, Beluga vodka also makes a historic pairing.
