FAQ
Our expert answers your questions
What type of crab is used?
We select crab meat with a soft, delicate aromatic profile, in line with our quality standards. The species used may vary according to the catch: brown crab, common crab, or king crab depending on availability. The exact composition is stated on the product label.
What is the difference with crab tarama?
Crab tarama is an emulsion based on cod roe enriched with crab meat: its aromatic profile therefore combines two marine ingredients (roe and shellfish). The crab spread is centred on the crab meat itself, prepared with cream-and-butter. The two products offer different profiles: tarama more marine and salty, the spread more delicate and creamy.
Is the crab spread suitable as a gift?
Yes, its refined profile and gourmet dimension make it a product appreciated as a gift. It fits well into bespoke hampers (with champagne, blinis, other spreads) for special-occasion gifts. For a more thoughtful gesture, pairing it with other Caviar House signatures creates a synergised epicurean experience.
Can the spread accompany a hot dish?
Yes, in preparations such as savoury pastries (as a filling), warm verrines or light gratins. For hot uses, add the spread at the end of cooking, just before serving, to preserve the delicacy of the aromatic profile.
Crab spread
The Crab Spread is one of our most refined preparations. The crab meat, selected for its aromatic softness, is folded into a smooth emulsion that preserves the delicacy of the profile. The result stands apart at once from more pronounced spreads (tuna, sardines): here the signature is more subtle, softer, and not too salty.
This preparation is particularly suited to refined aperitifs and signature appetisers. On a toasted slice, in a verrine or as a filling for savoury mini-éclairs, it extends the gourmet dimension of an elegant gathering.
