FAQ
Our expert answers your questions
Why pair scallop and lobster?
The two ingredients work in unison with each other. The scallop brings a characteristic sweet softness, the lobster a more pronounced marine depth. The pairing creates a balanced aromatic profile, where neither ingredient dominates the other. It is a classic of French marine cuisine, taken up here in a spread.
Does the spread really contain lobster?
Yes, our recipe includes lobster meat, alongside the scallop. The proportion is adjusted so that the lobster profile is perceptible without dominating. The exact list of ingredients and their proportions is stated on the label.
How long does it keep once opened?
Once opened, keep the spread refrigerated in a sealed container, and consume it within 3 to 5 days. The presence of cream and butter makes the product more delicate than oil-based spreads, hence this shorter window.
Which wine to serve with it?
Favour a fresh, mineral white wine: Chablis, Muscadet, Sancerre. Brut champagne is also suitable, particularly for an aperitif. Avoid red wines or overly oaked white wines, which would mask the nuances of the scallop.
Scallop and Lobster Spread
The Scallop and Lobster Spread is one of our most distinctive preparations. It pairs two signatures of marine cuisine: the scallop, for its characteristic sweet softness, and the lobster, for its aromatic depth. The combination creates a balanced profile, where each ingredient reveals itself without masking the other.
This preparation is particularly suited to elegant aperitifs and refined appetisers. On a lightly toasted slice, as a topping for blinis or alongside a glass of champagne, only accentuates the entertaining experience.
